Ingredients
- 1 1/4 pound fresh zucchini
- 1 teaspoon olive oil
- 2 garlic cloves, minced
- 1 cup Italian breadcrumbs
- 1/4 cup Romano cheese
- 1 large egg
- 3 tablespoons chopped basil
- 2 cups marinara sauce
Cooking Instructions
Step 1: Grate the zucchini.
Step 2: Drain the grated zucchini on a cheesecloth and remove excess moisture.
Step 3: In a skillet, add the olive oil and sauté the zucchini and garlic until cooked.
Step 4: Drain again to remove excess moisture.
Step 5: Add the breadcrumbs and the Romano cheese to the zucchini mixture.
Step 6: Add one large egg and the chopped basil and thoroughly mix together.
Step 7: Grab a small amount of the mixture and shape it into a round ball. Repeat until mixture is gone, placing the balls on a baking tray as you go.
Step 8: Add a little bit of oil spray before baking them in an oven preheated to 375 degrees F for 15 to 20 minutes.
Step 9: Heat the marinara sauce in a skillet and add the baked zucchini meatballs.
Step 10: Simmer for 7 to 8 minutes until meatballs have absorbed sauce.
Step 11: Serve with grated cheese on their own or add them to a pasta dish for a complete meal.
