Ingredients
- 2 slices thick-sliced turkey bacon
- 1 sheet puff pastry, thawed
- 4 thin slices of turkey
- Dijon mustard
- 2 slices swiss cheese
Cooking Instructions
Step 1: Preheat the oven to 400 degrees F. Lightly butter or spray an 8-inch or 9-inch square baking pan.
Step 2: Place a paper towel on a microwave-safe plate and lay the bacon slices in the center. Fold the excess paper towel over the bacon and microwave on high for 2 minutes, or until the bacon is crisp.
Step 3: Unfold the puff pastry and cut it lengthwise into thirds. Set 1 piece aside for another use.
Step 4: Cut the 2 remaining pastry strips in half widthwise to form 4 rectangles measuring about 3×5 inches. Lay 2 of the dough rectangles on the baking pan and arrange 1 of the turkey slices on each piece leaving a 1/4-inch border around the entire edge of the dough. Spread a little mustard over the turkey and top with the cheese. Break the bacon slices in half, arrange on top of the cheese, and top with the remaining turkey.
Step 5: Place the remaining pieces of dough on top of the turkey and press on all the sides with a fork to seal the edges. Bake the pockets for 15 to 18 minutes, or until they are golden brown.
