Thai Chicken Wraps


  • 1 lb ground chicken
  • 1 cup sliced mushrooms
  • 1 sliced red pepper
  • 4 chopped scallions
  • 2 garlic cloves, minced
  • 1 head green cabbage, separate leaves
  • 1 sliced mango
  • Cilantro to taste
  • 4 tsp soy sauce
  • 1 1/2 tsp sesame oil
  • 2 tsp rice vinegar
  • 1 tsp corn starch to thicken
  • Peanut sauce drizzled (sauce ingredients below)

Cooking Instructions

First combine the chicken with corn starch & soy sauce in a bowl, and mix.

Sauté mushrooms, red pepper, & garlic for 2-3 minutes on high heat. Then add the contents of the bowl from step 1 and sauté together for an additional 5 minutes (or until chicken is thoroughly cooked) and break up the chicken as you stir.

Next, mix ingredients below in a bowl to create the peanut sauce, then set aside.
Ingredients: 1/2 cup peanut butter, 2 tsp soy sauce, 3 tsp honey, 1 tsp rice vinegar, squeeze 1/2 lime, pinch of red pepper flakes, 1-2 tsp water (to create the desired consistency).

Lastly, create your wraps. Place a spoonful of the sautéd mixture into each cabbage leaf. Top with mango, peanut sauce, then cilantro and enjoy! For an extra kick, serve with sriracha sauce and lime on the side.
