Ingredients
- - FOR THE STRAWBERRY SRIRACHA DRESSING -
- 2 cups fresh strawberries
- 1 tablespoon sriracha, or less if you like it less spicy
- 2 tablespoons water
- 1/2 teaspoon salt
- - FOR THE STEAK -
- 6 ounce beef steak, like tenderloin
- Salt & pepper, to taste
- Oil, for the skillet
- - FOR THE SALAD -
- 2 cups baby spinach
- 1 1/2 cup arugula
- 1/3 cup roasted salted almonds
Cooking Instructions
Step 1: Make the Dressing: In a food blender, blend strawberries, water, Sriracha, and salt. Blend until smooth.
Step 2: Make the Steak: Season the steak with salt & pepper.
Step 3: Brush the steak with some oil. Heat the skillet over medium-high heat.
Step 4: Cook the steak for 3-4 minutes per side or until internal temperature reaches 140-150 degrees F.
Step 5: Place the steak aside for a few minutes. Once cooled and the juices are set, slice the steak into thin slices.
Step 6: Assemble the Salad: In a large bowl, combine spinach, arugula, and add slices of steak.
Step 7: Drizzle the salad with strawberry Sriracha dressing and top with almonds.
Step 8: Serve salad fresh.
