Ingredients
- 1 pound grass-fed ground beef
- Kosher salt and pepper
- 4 flour tortillas
- 4 slices American or sharp cheddar cheese
- 1 cup shredded iceberg lettuce
- Sliced dill pickles, optional
- Chipotle ranch, optional
Cooking Instructions
Step 1: Portion the beef into four 3.5-ounce balls. Have the salt, pepper, tortillas, and cheese ready to go as the cooking process happens quickly.
Step 2: Heat a griddle over high heat. If you do not have a griddle or prefer a pan, you can follow the same steps.
Step 3: When hot, season the beef with salt and pepper and place onto the griddle.
Step 4: Quickly place a flour tortilla on top of the beef and smash it down using a burger press or spatula. Press down to make sure it is extremely thin. It’s not a problem if the burger is a little bigger than the tortilla. Let the meat cook for about 3 minutes or until the color of the beef has darkened and is crisp on the bottom.
Step 5: Carefully scrape up the tacos using a sturdy spatula and flip the tacos. Reduce heat to low, add the cheese on top of the burger patty and cover to allow the cheese to melt, about 1 more minute.
Step 6: Remove from griddle and top with lettuce, pickles, and drizzle of chipotle ranch (if using), or any other burger sauce of your preference.
