Skillet Spinach Fritters


  • 3/4 cup buttermilk
  • 2 tablespoons olive oil
  • 1 egg
  • 1 cup steamed spinach
  • 1/2 teaspoon salt
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 cup crumbled feta
  • Basil pesto, for serving
  • Fresh cherry tomatoes, for serving

Cooking Instructions

Step 1: Prepare Spinach: Steam spinach in a steaming basket until wilted.

Step 2: Transfer the spinach to a colander and press with a spatula to remove excess liquid.

Step 3: Chop the spinach on a cutting board.

Step 4: Make the Fritters: Whisk buttermilk, olive oil, and egg in a mixing bowl.

Step 5: Add spinach and season with salt.

Step 6: Stir until combined.  Whisk in flour and baking powder.

Step 7: Fold in crumbled feta.

Step 8: Heat some oil in a skillet over medium-high heat.

Step 9: Drop around 2 tablespoons of the spinach mixture into the skillet.

Step 10: Cook the fritters for 2 minutes per side, or until golden.

Step 11: Serve fritters warm, topped with basil pesto and cherry tomatoes.
