- 1 pound asparagus
- 1/2 lime, juiced
- 2 cups water
- 2 tablespoons butter
- 1/2 teaspoon pepper
- 8 ounces ravioli, fresh
- 1/4 cup walnut pieces
- 2 tablespoons Parmesan, grated
Step 1: Cut the asparagus.
Step 2: Melt butter in a skillet. Once melted, sauté asparagus in butter for 3 minutes.
Step 3: Add the juice of 1/2 lime.
Step 4: Boil ravioli in a pot with hot, salted boiling water according to package directions.
Step 5: Strain the ravioli and toss with asparagus and lime butter sauce.
Step 6: Add the crushed walnuts and the grated Parmesan cheese.
Step 7: Garnish with parsley & serve.
