Pumpkin Dinner Rolls

  • 1 egg, divided (beat egg and divide in half)
  • 1/2 cup milk
  • 1/2 cup pumpkin puree
  • 3 tablespoons melted butter
  • 1/4 cup brown sugar
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 12 cashew nuts

Cooking Instructions

Step 1: In a mixing bowl, beat half the eff, milk, pumpkin puree, and butter.

Step 2: Whisk in brown sugar, flour, yeast, and salt.

Step 3: Start stirring dough until it comes together.

Step 4: Knead the dough until smooth.  Cover it and allow to rise for 2 hours.

Step 5: Once the dough is raised, punch it down and divide into 12 parts.

Step 6: Use a kitchen scale to weigh each part of the dough.  Each should be approximately 2 ounces.  Shape the dough into balls.

Step 7: Tie with kitchen twine, creating eight sections on each dough ball.

Step 8: Allow the dough to rise for the second time, for 15 minutes.

Step 9: Preheat oven to 375 degrees F.

Step 10: Brush the rolls with the remaining egg and bake for 20 minutes.

Step 11: Cool on a wire rack before removing the kitchen twine.

Step 12: Insert one cashew into each bun to mimic the pumpkin stem.
