- 1 cup orzo
- 2 tablespoons olive oil
- 1 teaspoon dried mint
- 1 teaspoon salt, plus more for serving
- 1/2 teaspoon paprika
- Zest of 1 lemon, in strips
- 2 scallions, chopped
- Juice of 1 lemon
Step 1: Simmer 1 cup orzo in a saucepan with 2 1/2 cups water, olive oil, dried mint, salt, paprika and 2 strips of lemon zest, stirring occasionally, until the orzo is tender, about 12 to 15 minutes.
Step 2: Let cool slightly. Stir in chopped scallions, lemon juice, and salt to taste before serving.
