Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 tablespoon melted butter
- 1 lemon, zested
- 3 tablespoons sugar
- 1 1/2 cups milk
- 2 tablespoons lemon juice
- 6 tablespoons egg whites
- 1 tablespoon baking powder
- 2 tablespoons vegetable oil
- 1 1/2 tablespoons poppy seeds
- - FOR GLAZE -
- 2 cups powdered sugar
- 4 tablespoons lemon juice
- 1 teaspoon poppy seeds
Cooking Instructions
Step 1: Whip eggs whites to soft peaks and set aside.
Step 2: Combine flour, sugar, baking powder, and salt in a stand mixer with a paddle. In a separate bowl, combine milk, lemon juice, zest, poppy seeds, oil, and butter.
Step 3: Add milk mixture slowly to the dry ingredients with the mixer on slow. As soon as they are combined, fold in the egg whites.
Step 4: Cook in your favorite pan, ramekin, or griddle.
Step 5: For the glaze, combine all ingredients and mix thoroughly.
