Lemon-Blueberry Rolls

Ingredients

  • Coconut oil spray
  • All-purpose flour
  • 1 lb. package Fresh Thyme refrigerated pizza dough
  • 2 tablespoons coconut oil, melted
  • 1/3 cup organic light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup fresh blueberries
  • 1 cup powdered cane sugar
  • 1 tablespoon fresh lemon juice, plus more, as needed
  • 1 teaspoon lemon zest

Cooking Instructions

Step 1: Spray an 8x8x2-inch baking pan with coconut oil spray.  Set aside.

Step 2: Sprinkle work surface with flour.  Pat or roll dough into a 12×10-inch rectangle.  Brush dough with melted coconut oil to within 1/2-inch of the edges.

Step 3: In a small bowl, combine brown sugar and cinnamon.  Sprinkle brown sugar mixture and blueberries onto dough.

Step 4: Starting with the long side, tightly roll up dough.  Pinch seam to seal.  Using a serrated knife, cut dough into 9 slices.  Place slices, cut side down, in prepared pan.  Cover and let rise until doubled in size.*

Step 5: Preheat oven to 375 degrees F.  Bake rolls for 20 to 22 minutes or until golden brown.  Cool for 10 minutes.

Step 6: For lemon icing, in a medium bowl, combine powdered sugar, lemon juice, and lemon zest.  Add more lemon juice, 1 teaspoon at a time, to reach a drizzling consistency.  Drizzle icing over rolls.

Step 7: Store leftovers in the refrigerator.  To serve, warm chilled rolls in microwave at 30% power at 15 second intervals until soft.

Tip:*Make Ahead Option: Cover pan of unbaked rolls and refrigerate overnight.  Remove from refrigerator 30 minutes before baking.  Preheat oven to 375 degrees F.  Bake rolls for 20 to 22 minutes or until golden brown.  Cool for 10 minutes.  Top with lemon icing & serve.
