Step 1: Chop the garlic cloves finely.
Step 2: Add salt, olive oil, lemon juice, and parsley to make the dressing.
Step 3: Preheat a grill to medium-high. While the grill preheats, cut the zucchini into thin strips.
Step 4: Grill the zucchini with no oil until grill marks appear, about 2 to 3 minutes per side. Flip and grill for 2 more minutes.
Step 5: Prepare the grilled zucchini strips by adding the dressing on top and tossing to coat.
Step 6: Garnish with freshly chopped parsley.
