Gingerbread Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons coconut sugar
  • 2/3 cup almond milk, unsweetened)
  • 2 tablespoons almond butter
  • 1 teaspoon ginger, freshly grated
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoon baking soda
  • 1 tablespoon pure maple syrup, for drizzling
  • 1 tablespoon coconut flakes, for garnish
  • Coconut oil, for cooking

Cooking Instructions

Step 1: In a large bowl, mix the dry ingredients: flour, sugar, baking soda, and spices.

Step 2: Add the almond milk and almond butter, and mix well to incorporate, until a smooth, creamy batter is formed.

Step 3: Grease a non-stick skillet with a bit of coconut oil and heat over medium heat.

Step 4: Scoop the batter into pancakes and cook for 2 minutes until bubbles appear on top.

Step 5: Flip over and cook 1 more minute.

Step 6: Continue with the rest of the batter.

Step 7: Drizzle the pancakes with maple syrup and garnish with coconut flakes.
