Ingredients
- 1 cup fresh or frozen sweet corn kernels, husked, rinsed, and drained
- 3/4 tablespoon butter
- 1 medium onion, peeled and finely chopped
- 1/2 tablespoon all-purpose flour
- 3 cloves garlic, finely chopped
- 3 cups chicken broth, homemade preferred
- 1 large potato, peeled and finely chopped
- 1/2 teaspoon dried thyme
- Salt, to taste
- Black pepper powder, to taste
- 1/2 cup full-fat milk
- Fresh parsley leaves, for garnish
- Low-fat cheddar cheese, shredded for garnish
Cooking Instructions
Step 1: Heat a large pot on medium heat and add butter to it.
Step 2: Melt the butter and cook onion until it softens and turns light brown in color.
Step 3: Stir in flour to the onion and cook for about 2 minutes while stirring constantly.
Step 4: Pour the broth into the pot and bring it to a boil.
Step 5: Add garlic, potatoes, and corn kernels to the boiling broth and then let it cook for about 20 minutes on medium heat or until potatoes are tender.
Step 6: Add thyme, salt, and black pepper powder to the boiling soup and then cook for another 2 to 3 minutes.
Step 7: Remove pot from the flame and then let it cool slightly.
Step 8: Using a hand blender, blend the soup until smooth and then heat again over medium flame.
Step 9: Stir in milk and then bring the mixture to a boil.
Step 10: Simmer the soup until it reaches the desired thick consistency.
Step 11: Serve the soup hot and garnish with parsley and cheddar cheese.
