- 1 cup all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon Kosher salt
- 1/2 cup vegetable oil
- 4 tablespoons butter, melted
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 3 large eggs
- 1 tablespoon light corn syrup
- 1 teaspoon pure vanilla extract
- - FOR THE GANACHE -
- 1 cup chocolate chips
- 6 tablespoons heavy cream
- Rainbow chips
Cooking Instructions
Step 1: Preheat oven to 350 degrees F. Line a 9″ x 9″ baking pan with parchment paper and grease with cooking spray. In a medium bowl, whisk together flour, cocoa powder, and salt.
Step 2: In another medium bowl, whisk together oil, melted butter, and sugars. Add eggs, corn syrup, and vanilla and whisk until incorporated. Add dry ingredients and stir until just combined. Pour into prepared pan and smooth top.
Step 3: Bake until a toothpick inserted in the middle comes out with a few moist crumbs, about 25 minutes. Let cool completely.
Step 4: Make Ganache: Place chocolate chips in a heatproof bowl. In a small saucepan over medium heat, bring heavy cream to a simmer. Pour over chocolate chips and let sit 1 minute. Whisk until smooth.
Step 5: Pour ganache over brownies and smooth with an offset spatula, then top with rainbow chips. Place brownies in the refrigerator to set ganache, at least 20 minutes, before serving.
