- 2 pounds new potatoes
- 1/2 cup fresh chives, chopped
- 1/3 cup olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- Kosher salt and black pepper
- 2 tablespoons fresh flat-leaf parsley, chopped
