Chile Verde

Ingredients

  • 2 pounds tomatillos (about 16), shucked & rinsed
  • 3 large poblano peppers, halved lengthwise, stems & seeds removed
  • 3 cubanelle peppers, halved lengthwise, stems & seeds removed
  • 1-2 serrano peppers, depending on your heat preference
  • 1 large white onion, cut into large chunks
  • 4 cloves garlic
  • 3 pounds pork shoulder, cut into 1-inch pieces
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt
  • 1 teaspoon freshly ground black pepper, plus more to taste
  • 2 teaspoons ground cumin
  • 2 teaspoons dried Mexican oregano
  • 1/2 teaspoon ground coriander
  • 3 cups low-sodium chicken broth
  • Cilantro leaves, for serving
  • Lime wedges, for serving

Cooking Instructions

Step 1: Preheat broiler to high.  On a large rimmed baking sheet, arrange tomatillos, poblanos, cubanelles, serranos, onion, and garlic cloves in an even layer.  Broil until vegetables are deeply charred, flipped tomatillos and peppers halfway, 10 to 15 minutes.  (Watch closely.)  Remove sheet from oven and let vegetables cool.

Step 2: Meanwhile, heat a large Dutch oven over medium-high heat.  In a large bowl, season pork with the oil, 2 tablespoons salt, and 1 teaspoon pepper.  Add pork to Dutch oven in an even layer, and cook, undisturbed, for 5 minutes, or until one side is browned.  Stir pork and flatten to an even layer, and cook undisturbed again, about 5 minutes more.  Continue to cook, stirring now so pork gets browned all over, about 5 minutes more.

Step 3: Add cumin, oregano, and coriander and stir so meat is evenly coated in spices.  Cook for about 30 seconds, or until spices are fragrant. Remove from heat.

Step 4: In a blender, combine roasted vegetables, broth, and 1 tablespoon salt.  Blend until smooth; pour into pot.  Increase heat to high.  When liquid begins to boil, reduce heat to low.

Step 5: Cook, covered, stirring occasionally, for about 1 1/2 hours, or until the pork falls apart easily and the sauce has reduced and thickened.

Step 6: Remove lid, and cook uncovered for an additional 45 minutes, stirring frequently, until sauce has thickened further.  Season to taste with salt & pepper.
