Ingredients
- 1/4 cup fresh lime juice
- 1/4 cup chopped red onion
- 1 teaspoon Kosher salt
- 4 whole ripe avocados
- 1/2 cup diced tomato
- 1/4 cup chopped cilantro
- 1 jalapeno, seeded & diced
- Tortilla chips & fresh veggies, for serving
Cooking Instructions
Step 1: In a medium bowl, combine the lime juice, onion, and Kosher salt. Let sit for 5 minutes.
Step 2: Meanwhile, halve the avocados lengthwise and remove the pits. Using a spoon, scrape the avocado into the bowl with the onion mixture. With a fork, or potato masher, mash the avocados, making sure to leave it relatively chunky.
Step 3: Add the tomatoes, cilantro, & jalapeno and stir together. Serve with tortilla chips & fresh veggies, or as a topping on The Spicy Olive’s Grilled Taco Burgers!
