Beef Totchos

Ingredients

  • 2 cups sharp cheddar cheese, shredded (8 ounces)
  • 1 (32-ounce) bag frozen tater tots
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 tablespoon taco seasoning
  • 1 cup frozen corn kernels
  • Chopped tomatoes, jalapenos, & sour cream, for garnish

Cooking Instructions

Step 1: Arrange a rack in the middle of the oven and preheat the oven to 400 degrees F.  Meanwhile, shred 8 ounces of sharp cheddar cheese and chop up some tomatoes for garnish.

Step 2: Place the tater tots on a rimmed baking sheet and bake for 30 minutes.  Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.  Add 1 pound lean ground beef, season with 1 tablespoon taco seasoning, and cook until cooked through and browned.

Step 3: Stir in 1 cup frozen corn kernels and remove from heat.  Spoon the beef and corn over the tots, then sprinkle with the cheese.  Continue baking until the cheese is melted and bubbly, about 10 minutes.  Top with chopped tomatoes, sliced jalapenos, and sour cream.
