Ingredients
- 2 (15.25 ounce) cans whole kernel corn, drained
- 1 (8 ounce) package shredded Cheddar cheese
- 1/2 cup chopped green bell pepper, diced (about 1/2 medium pepper)
- 1/2 cup chopped red bell pepper, diced (about 1/2 medium pepper)
- 1/3 cup chopped red onion (about 1/4 large onion)
- 3/4 cup mayonnaise
- 1/8 cup sour cream
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- Dash of black pepper
- 1 (10.5 ounce) package corn chips (Fritos Original preferred)
- Scoop-style corn chips, to serve (Fritos Scoops preferred)
- Sliced jalapeno peppers, for garnish (optional)
Cooking Instructions
Step 1: Stir together corn, cheese, green & red bell peppers, onion, mayonnaise, sour cream, paprika, cumin, and black pepper in a medium bowl until well-combined. Chill at least 1 hour, or until ready to serve.
Step 2: Just before serving, lightly crush up the chips in the closed bag of regular corn chips. Then, pour about 3/4 of the bag into the salad and stir until fully combined.
Step 3: Top with jalapeno slices, if using, and the remaining crushed corn chips. Serve with scoop-style corn chips.
