Ingredients
- 1 packet of noodles
- 4 tablespoons cooking oil
- 3/4-1 cup scallions or spring onions, diagonally-sliced into 1-inch long sections
- 5-6 garlic cloves, finely sliced
- 2-3 teaspoons gochugaru or regular chili flakes
- 2 tablespoons light soy sauce
- 1 1/2-2 tablespoons dark soy sauce
- 1 tablespoon rice vinegar
- 1-2 teaspoons brown sugar (optional)
Cooking Instructions
Step 1: Cook noodles of choice according to package instructions. Drain & set aside.
Step 2: Pour 3-4 tablespoons of oil in a wok or large pan.
Step 3: Once oil is warm, add the finely sliced garlic cloves and sliced scallions. Cook, stirring continuously for a few minutes, until evenly browned and caramelized. Remove & set aside.
Step 4: Lower the heat and add light soy sauce, dark soy sauce, rice vinegar, gochugaru, and brown sugar. Feel free to adjust these amounts to your preference.
Step 5: Let the sauce sizzle with fine bubbles. If it bubbles too much, lower the heat. Stir the sauce and let it simmer for a minute or so until it thickens slightly.
Step 6: Toss in the noodles, stirring well to combine. Serve hot, heaping the caramelized scallions on top with a scattering of the crunchy garlic chips. Mix & serve.
